1) Preheat oven to 400°F and line 2 baking sheets with parchment paper, set aside
2) Peel each sweet potato and cut lengthwise into thin strips.
3) Place sweet potato strips, olive oil, rosemary, paprika, and sea salt. Combine to coat all surfaces of the sweet potatoes.
4) Spread sweet potatoes in an even layer on your parchment-lined baking sheets. Place in oven and bake for about 20 minutes. Flip the fries and return to oven to continue baking another 20 minutes, or until fries are crispy.
