Maple Cranberry Orange Yogurt Parfait Recipe

This cranberry parfait combines your favorite flavors of the season from tart cranberries to nutty pecans and the natural sweetness of maple syrup.

Cranberry Sauce Ingredients

• 1 bag (12 oz) Cranberries, fresh or frozen

• 1/4 cup 100% Maple Syrup

• Zest of 1 Orange + Juice

• Water, as needed

Instructions:

1. Heat a large skillet over medium heat.

2. Add orange zest, orange juice, maple syrup and half of the cranberries.

3. Allow mixture to cook until cranberries begin to burst, about 10 minutes, stirring frequently.

4. Add remaining cranberries to the skillet and cook an additional 10 minutes or until second batch of cranberries begin to pop. If the mixture begins to look dry, add water, 1 tablespoon at a time until desired consistency is reached.

5. Remove from burner and set aside.

Yogurt Ingredients

• 2 cups Plain Nonfat Greek Yogurt

• Zest of 1 Orange + Juice

• ½ teaspoon Vanilla Extract

• ½ teaspoon Cinnamon

Instructions:

Add all ingredients to a bowl and stir to combine. Set aside.

Nutty Oat Mixture Ingredients

• 1/3 cup Pecans, chopped

• ½ cup Old Fashioned Oats

• ¼ teaspoon Sea Salt

• 1 tablespoons Maple Syrup

Instructions:

1. Add all ingredients to a bowl and combine until well incorporated.

Parfait Assembly:

1. Add a layer of yogurt in the bottom of a glass, followed by a layer of cranberry. Next add an additional layer of yogurt and top with a sprinkle of the nutty oats.
