How to Cut a Mango
First and foremost, start with a perfectly ripe mango firm to the touch. A mango that is overly ripe will be mushy in texture and difficult to manage.

1. Find the stem at the top and cut away from the seed.
Mangoes feature a long, flat seed in their centers. To rid the seed, find the stem at the top. Place the mango on a flat cutting board then cut vertically ¼ inch away from the middle. Repeat on the other side of the mango.
2. Start cutting the mango flesh.
Using a paring knife, cut the flesh in vertical lines. Be careful to not cut through the skin.
3. Continue cutting into a grid-like pattern.
Cut the flesh in horizontal lines, making a grid-like pattern. Also, continue to make sure the skin is not punctured and remains intact.
4. Flip the mango flesh outward.
Press the underside of the half so the inside of the fruit is pushed out into single cubes.
