• 10 whole eggs
• 1/2 cup reduced-fat milk
• 1/4 cup light sour cream
• ¼ cup reduced-fat white cheddar cheese, shredded
• 3 Tbsp artichoke hearts, chopped
• 3 Tbsp spinach, frozen and chopped (thawed and drained)
• 2 Tbsp roasted red peppers, chopped
• Black pepper, pinch
• Sea salt, pinch

Instructions:

1. Preheat oven to 375°F.

2. In a medium bowl, whisk the eggs, milk, sea salt, and black pepper together.

3. Fold in sour cream and cheese.

• 10 whole eggs
• 1/2 cup reduced-fat milk
• 1/4 cup light sour cream
• 1/4 cup reduced-fat white cheddar cheese, shredded
• 1/8 cup Swiss Cheese, shredded
• 1/2 cup chorizo, cooked, crumbled
• 1/2 onion, diced
• 1 red bell pepper, seeded and diced
• 1/4 cup black beans
•  1/2 tsp cumin
• 1 tsp chili powder
• 1 Tbsp olive oil

Instructions:

1. Preheat oven to 375°F.

2. For the bell pepper and onion, heat olive oil in a skillet over medium heat. Add onion and cook for 2 minutes before adding the bell pepper. Continue cooking an additional 5 minutes until softened. Remove from heat and set aside.

3. In a medium bowl, whisk together eggs, milk, cumin, chili powder, and black pepper.

4. Fold in sour cream and cheeses.

5. Add chorizo, black beans, and cooled bell pepper with onion and lightly mix.
