Seaweed Salad Recipe

Ingredients:
• 1 oz wakame seaweed (dried)
• 1 1/2 Tbsp rice vinegar
• 1 Tbsp sesame oil
• 1 Tbsp soy sauce
• 1 Tbsp sugar
• 1/2 tsp ginger juice
• 1 scallion, thinly sliced
• 1 Tbsp sesame seeds
Instructions:
1. Rinse the dried seaweed, add to a large bowl, and cover with cold water. Soak for about 10 minutes and allow it the seaweed to rehydrate and become tender. Drain the seaweed and gently squeeze out excess water.
2. For the seaweed salad dressing, add vinegar, oil, soy sauce, sugar, and ginger juice to a small bowl. Mix until combined.
3. Toss seaweed with the dressing, taste, and add more seasoning if necessary. Garnish with sesame seeds and sliced scallions then serve.
