Easy Beef & Broccoli Stir Fry Recipe


Feeling a little stir crazy? Looking for a recipe to wok your world?

Take a flavor trip to Asia by first dusting off your wok, a traditional Chinese cooking vessel with a wide, yet shallow, round shape. It is usually made from cast iron or carbon steel, and its shallow edges allow each ingredient to be browned to perfection. 

Stir fry is the most common dish cooked up in a wok, and the very dish we are whipping up today! 

Imagine: Tender strips of seasoned beef and steamed broccoli florets coated in a flavorful stir fry sauce. 

But not just any stir fry sauce…

Whereas sauces can be laden in sugar, ours takes a more unique approach with a small amount of brown sugar, garlic, and ginger thrown into the mix.

Beef & Broccoli Recipe

Yield: 6 servings 

Nutrition per serving: 260 calories, 11 g fat, 29 g protein, 12 g total carb, 2 g fiber

Prep time: 15 minutes
Cook time: 20 minutes
Total time: 35 minutes

Ingredients:

• 1 1/2 lbs flank steak, thinly sliced across the grain
• 1 Tbsp sesame oil
• 4 cloves garlic, minced
• 1 cup white onion, julienned
• 4 green onions, thinly sliced
• 4 cups broccoli florets
• 2 Tbsp arrowroot starch (or another preferred thickener such as corn starch)
• 3/4 cup water
• 1/3 cup low-sodium soy sauce 
• 2 Tbsp brown sugar
• 1 Tbsp rice vinegar
• 2 tsp ginger, minced

Instructions:

1. Cut the beef across the grain into thin, even slices. 

2. Heat sesame oil in a wok or skillet over medium-high heat. Add the beef and cook until well-browned, about 5 to 7 minutes. Once browned, remove from the pan, drain on paper towels, and set aside.

3. In the same pan used for the beef, add garlic, white onion, and green onions. Cook about 1 minute, stirring frequently, until fragrant. Add broccoli, cover and allow to continue cooking for 5 minutes.

4. In a small bowl, whisk arrowroot starch and water until smooth without clumps. For the sauce mixture, combine soy sauce, brown sugar, rice vinegar, and ginger in a medium bowl. Add arrowroot starch mixture and stir to combine. Set aside.

5. Remove the cover from pan and add the sauce. Cook until the sauce starts to thicken, about 3 to 5 minutes. Add beef and stir to combine, cooking an additional 2 to 3 minutes until sauce is well incorporated.

6. Serve with fluffy brown rice and sesame carrots as desired, or other satisfying pairing suggestions below!

Here are some common substitutions to meet many dietary needs and preferences:

• Gluten-free: Replace low sodium soy sauce with tamarind or liquid aminos. Always doublecheck and verify such sauces are certified gluten-free.

• Red meat: Replace beef with chicken, pork, shrimp, or white fish.

• Vegetarian and vegan substitutions: Replace beef with plant-based proteins, including chickpeas, edamame, and tempeh.

How to Serve

The beef and broccoli recipe is packed with protein, fiber, and other nutrients. But why stop there? 

Enhance dish with more fiber, B vitamins, and other nutrients by complementing with a whole grain or another complex carb. These may include:
