Red Bell Pepper Coulis Ingredients
• 1 Red Bell Pepper, quartered with seeds and stem removed
• 2 tablespoons Lemon Juice
• 1 teaspoon Olive Oil
• 1 cup Carrots, peeled and diced
• ¼ teaspoon Thyme, dry
Yellow Bell Pepper Coulis Ingrdients
• 1 Yellow Bell Pepper, quartered with seeds and stem removed
• 2 tablespoons Lemon Juice
• 1 teaspoon Olive Oil
• 1 cup Carrots, peeled and diced
• ¼ teaspoon Thyme, dry
Instructions
1. Heat oven to 400F.
2. Place bell peppers on a baking sheet, cut side down and drizzle with olive oil.
3. Roast until edges begin to brown, about 10 minutes.
4. Remove from oven, keeping red and yellow peppers separated.
5. Add red bell pepper, lemon juice, olive oil and thyme to a blender and blend until smooth.
6. Repeat step 5 for yellow bell pepper.
7. Pair with grilled salmon and enjoy!
