Artichoke, Spinach Roasted Red Pepper Frittata

This frittata recipe features the perfect mix of colorful vegetables for added nutrients and depth.

Truly, eating veggies in the morning (or evening) hours has never been so simple nor satisfying!

Ingredients:

• 10 whole eggs
• 1/2 cup reduced-fat milk
• 1/4 cup light sour cream
• ¼ cup reduced-fat white cheddar cheese, shredded
• 3 Tbsp artichoke hearts, chopped
• 3 Tbsp spinach, frozen and chopped (thawed and drained)
• 2 Tbsp roasted red peppers, chopped
• Black pepper, pinch
• Sea salt, pinch

Instructions:

1. Preheat oven to 375°F.

2. In a medium bowl, whisk the eggs, milk, sea salt, and black pepper together.

3. Fold in sour cream and cheese.

4. Add artichoke hearts, spinach, and roasted red pepper and lightly mix.

5. Distribute mixture evenly into greased baking dishes.

6. Bake for approximately 20 minutes, or until the egg center is set.

Ham and Cheese Frittata

Ingredients:

• 10 whole eggs
• 1/2 cup reduced-fat milk

• 1/4 cup reduced-fat white cheddar cheese, shredded
• 1/8 cup Swiss cheese, shredded
• 4 slices Canadian bacon, rough chopped
• Black pepper, pinch

• 1/2 cup reduced-fat milk
• 1/4 cup light sour cream
• 1/4 cup reduced-fat white cheddar cheese, shredded
• 1/8 cup parmesan cheese, grated
• Black pepper, pinch
• 1 yellow onion, julienned 
• 1 Tbsp olive oil

Instructions:

1. Preheat oven to 375°F.

2. For the onions, heat olive oil in a skillet over medium heat. Add onions and cook for 15-20, stirring frequently until onions are caramelized. Remove from heat and set aside.

3. In a medium bowl, whisk together eggs, milk, and black pepper.

4. Fold in sour cream and cheeses.

5. Add cooled caramelized onions and lightly mix.

6. Distribute mixture evenly into greased baking dishes.

7. Bake for approximately 20 minutes, or until the center is set.

Southwest Chorizo Frittata

Take a quick trip down south(west) with this frittata recipe. Not only is it rich in protein, but stuffed with fiber thanks to the use of black beans.

And featuring red bell pepper and chili powder, the spice has never tasted so nice!

Ingredients:

• 10 whole eggs
• 1/2 cup reduced-fat milk
• 1/4 cup light sour cream
• 1/4 cup reduced-fat white cheddar cheese, shredded
• 1/8 cup Swiss Cheese, shredded
• 1/2 cup chorizo, cooked, crumbled
• 1/2 onion, diced
• 1 red bell pepper, seeded and diced
• 1/4 cup black beans
•  1/2 tsp cumin
• 1 tsp chili powder
• 1 Tbsp olive oil

Instructions:

1. Preheat oven to 375°F.

2. For the bell pepper and onion, heat olive oil in a skillet over medium heat. Add onion and cook for 2 minutes before adding the bell pepper. Continue cooking an additional 5 minutes until softened. Remove from heat and set aside.

3. In a medium bowl, whisk together eggs, milk, cumin, chili powder, and black pepper.

4. Fold in sour cream and cheeses.

5. Add chorizo, black beans, and cooled bell pepper with onion and lightly mix.

6. Distribute mixture evenly into greased baking dishes.

7. Bake for approximately 20 minutes, or until the center is set.
