Sweet Potato Pancakes
Serves 2
Nutrition per serving with 3 turkey sausage links on the side
Calories: 330
Protein: 24 g
NET Carbohydrate: 19 g

1 cooked sweet potato
2 Eggs
2 tablespoons Peanut Butter
¼ teaspoon baking powder

Mix all ingredients in bowl. Mixture will be lumpy.

Cook on a skillet or griddle and enjoy!

Serve topped with a sprinkle of cinnamon and a side of turkey sausage.

Sweet Potato Hummus
Makes: 2-3 cups
Nutrition for ¼ cup serving size

1 can garbanzo beans
1 ½ cups cooked sweet potato, flesh only
2 cloves garlic
1 lemon + zest
6 tablespoons olive oil
1 ½ teaspoons sea salt
½ teaspoon black pepper
1 ½ teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon apple cider vinegar

First add your peeled garlic cloves in a food processor. Pulse until garlic is finely chopped. Add garbanzo beans and sweet potato, pulsing to combine. Add remaining ingredients and pulse until mixed evenly. 

Refrigerate until ready to eat! Serve with your favorite vegetables or as a salad topper.

Sweet Potato and Rosemary Fries
Serves 6
Calories: 130
Protein: 2 g
NET Carbohydrate: 10 g

2 large sweet potatoes
4 tablespoons olive oil
2 tablespoons fresh rosemary, chopped
1 teaspoon smoked paprika
1 teaspoon sea salt

1) Preheat oven to 400°F and line 2 baking sheets with parchment paper, set aside

2) Peel each sweet potato and cut lengthwise into thin strips.

3) Place sweet potato strips, olive oil, rosemary, paprika, and sea salt. Combine to coat all surfaces of the sweet potatoes.

4) Spread sweet potatoes in an even layer on your parchment-lined baking sheets. Place in oven and bake for about 20 minutes. Flip the fries and return to oven to continue baking another 20 minutes, or until fries are crispy.
