If you don’t want to wait until March to celebrate this sweet, healthy treat, there are plenty of ways to enjoy strawberries this month; and not all of them are doused in sugar and baked in to a dessert.

Strawberries can make a great addition to any summer salad. Pairing well with spinach, a food rich in magnesium, strawberry spinach salad is a good pool-side lunch.

Strawberry and Spinach Salad with Honey Balsamic Vinaigrette

Ingredients:

- 2 cups fresh spinach
- 1 cup sliced fresh strawberries
- ½ cup crumbled Gorgonzola cheese
- ½ cup raw pecans
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- ½ cup olive oil
- Salt and ground black pepper to taste

Directions:

Stir the balsamic vinegar and honey together in a bowl; slowly stream the olive oil into the mixture while whisking continuously. Season with salt and pepper. Drizzle dressing over the salad just before serving.
