Skinny Turkey Meatloaf
We gave this traditional dish a healthy upgrade by using turkey and extra lean ground beef. American meatloaf originated by German-Americans in Pennsylvania during Colonial times—but it didn’t appear in cookbooks until the 19th century. This hearty entrée is perfect for the entire family is guaranteed to make your taste buds explode with flavor.
1 teaspoon olive oil
1 cup finely chopped onion
3 garlic cloves, minced
1 cup dry breadcrumbs
1/2 cup fat-free milk
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 large egg whites
1 1/2 pounds ground turkey breast
1/2 pound ground beef, extra lean
2 (10-ounce) packages frozen leaf spinach, thawed, drained and squeezed dry
1/2 cup of Walden’s Farm original BBQ sauce (from Whole Foods)
1. Preheat oven to 350°.
2. Heat a large nonstick skillet coated with olive oil over medium-high heat. Add onions and sauté for 4 minutes. Add the garlic and sauté for 30 seconds. Remove from heat. Combine onion mixture, breadcrumbs, and the next 8 ingredients (breadcrumbs through spinach), making sure to stir well.
3. Shape the meat mixture into a 12 x 5-inch loaf on a broiler pan coated with cooking spray. Brush BBQ sauce over the top of the loaf. Bake at 350° for 45 minutes or until a thermometer registers 160°; let stand for 10 minutes before slicing—and enjoy!
