Recipe: Shrimp Gumbo

This savory and delicious shrimp gumbo recipe will transport you to the French Quarter of New Orleans where you can forget all of your worries and enjoy great tasting, real food.

The refreshing shrimp and spicy sausage is the perfect pair and they come together in this unique shrimp gumbo. We’re sure you’ll enjoy it.

What you’ll need:

2 Tbsp of vegetable oil

2 Tbsp of flour

1/2 large onions: chopped

1/2 cup chopped celery

3 garlic cloves: chopped

1/2 cup chopped green peppers

3 oz tomato paste

7 oz fire-roasted tomatoes

1 lb frozen sliced okra

1lb peeled shrimp

1 Tbsp file powder

1 lb Andouille sausage: casing peeled off and sliced into bite sized pieces

1 cup water

1 cup shrimp stock, or 2 cups of chicken stock

1/2 Tbsp Creole seasoning

1 1/2 Tbsp chopped parsley

1 bay leaf

Directions:

Step 1:

Heat oil in a heavy cast iron skillet, and then slowly stir the flour in. Continue to stir until the flour is dark brown. Add the next 4 ingredients (onions, celery, garlic and green peppers); stir until onions are clear. Add tomato paste and a cup of water. Add okra and tomatoes. Cook slowly, adding all the water and shrimp stock a little at a time. Stir in the Creole seasoning. Cook for about an hour on low heat, stirring occasionally to prevent mixture from sticking to the bottom of the pot; adding water if necessary. Add the file powder and stir until blended. Cook for 2 minutes.

Step 2:

Add the shrimp, sausage, parsley and the bay leaves. Cook for another 5 minutes, adding seasoning as you taste. Next, serve over boiled or steamed rice. Voila! You have a fantastic, healthy lunch or dinner entree.
