Italian Cauliflower Recipe

Yield: 6 servings

Ingredients:

• 1 head of cauliflower
• 1 small red onion, cut into strips
• 1 red bell pepper, cored and cut into strips
• 2 Tbsp balsamic vinegar
• 1 Tbsp red wine vinegar
• 3 garlic cloves, minced
• 2 Tbsp olive oil
• Salt and pepper to taste

Instructions:

1. Preheat the oven to 425°F. Lightly coat a large rimmed baking sheet with nonstick cooking spray.

2. Rinse and cut the cauliflower into bite-sized pieces. Toss all ingredients together and spread evenly on the coated baking sheet.

3. Roast until the cauliflower is tender and browned in some spots, about 20 minutes. Turn halfway through roasting for a more even cook. Watching carefully, broil on high for a couple of minutes for a greater roasted flavor.

4. Serve with baked chicken parmesan, chicken cacciatore, an egg frittata, and other entrees detailed below!
