Cabbage Slaw with Vinegar

Yield: 6 servings

Ingredients:

• 2 Tbsp apple cider vinegar
• 3 Tbsp extra virgin olive oil
• 1 tsp sea salt
• 1/2 tsp black pepper
• 2 cups green cabbage, thinly sliced (can also use pre-shredded cabbage and red cabbage as desired)
• 1 cup carrots, shredded

Instructions:

1. In a large bowl, whisk the apple cider vinegar, olive oil, salt, and pepper. Add the cabbage and carrots and toss to combine.

2. Cover and refrigerate for at least one hour before serving. This allows the ingredients to marinate and become even more flavorful!
