Cinnamon Apple Pancakes
Direct from BistroMD's very own Chef Jack, here is a healthy breakfast recipe that is certain to start your morning off the right way.
You will need:
2/3 cup low-carb pancake mix
1 can/bottle of butter-flavored cooking spray
1 small apple, cored and sliced into 8, pieces
1 pinch ground cinnamon
4 ounces sugar-free maple syrup (equal to 1/2 cup)
Make the pancake batter according to the directions on the package and set to the side.
Spray a large, nonstick sauté pan with the butter-flavored cooking spray and heat over medium high heat for about 1 minute.
Take your apple slices, and place them in the pan. Cook the slices for about 1 minute on each side, and then season with cinnamon.
Separate the apples into small groups, (4 each), on opposite sides of the pan. Make sure the apple slices are laid out as flat as possible.
Take your mixed pancake batter and pour the batter over each group of apples. Cook each pancake until lightly golden brown on each side.
Separate the pancakes onto 2 plates, and drizzle the maple syrup over all.
Note: You may use Granny Smith or Jonathan apples if you wish.
