Low fat pumpkin pie

Whoever said you couldn’t start off with desert hasn’t had our delicious pumpkin pie. This healthy low fat recipe is good all year round, but especially good for Thanksgiving.

This wholesome pie serves 8.

Start off by spraying a 9-inch pie plate with nonstick cooking spray. In a large bowl, sprinkle two 1-ounce envelopes of unflavored gelatin in water. Let stand for 5 minutes. Pour 1 cup of fat-free evaporated milk into a small saucepan and heat until almost boiling. Remove from heat and whisk into gelatin. Don't worry if it the gelatin has hardened, the hot milk will liquefy it. Stir in another cup of evaporated milk, ¾ cup of packed brown sugar, one 15-ounce can of pure pumpkin, 1 teaspoon of cinnamon,  ½ teaspoon of ginger, ¼ teaspoon of nutmeg, ¼ teaspoon of cloves and 1 teaspoon of vanilla extract. Stir until well blended. Pour pumpkin mixture into pie plate. Refrigerate for at least 2 hours and enjoy!

There are 152 calories, 2 calories from fat, 0.2g (Sat 0.2g) total fat, 2mg of cholesterol, 85mg of sodium, 32.1g carbohydrates, 1.7g of fiber and 5.4g protein.

Fresh fruit kebabs with lemon lime dip

Here’s a healthy low fat recipe for a nice, breezy appetizer.

In a small bowl, whisk together 4 ounces of low fat, sugar free lemon yogurt, 1 teaspoon of fresh lime juice and 1 teaspoon of lime zest. Cover and refrigerate until needed.

Then thread 1 of each fruit (4-6 pineapple chunks, 4-6 strawberries, 1 peeled and diced kiwi, ½ a banana cut into ½ inch chunks and 4-6 red grapes) onto the skewer. Repeat with the other skewers until the fruit is gone. Serve with the lemon lime dip.
