What is Gluten?
Many people lump gluten into one large category: bread. But gluten is much more than that.
Gluten is a protein food additive found in wheat, barley, rye, malts and triticale. In the case of traditional baked goods, bakers usually use only one type of flour - wheat flour, which contains gluten. Gluten is what holds baked goods together and gives them structure and springiness. It's also found in beer since wheat, barley, rye and malts are used to make that adult beverage we all love so much.
Discovery of Gluten-Related Diseases
In attempts to find the cause for evasive health symptoms such as abdominal pain, digestive problems in general, feeling bloated after eating and sometimes diarrhea, physicians began targeting gluten as the potential culprit. Doctors, dieticians and weight loss specialists conducted extensive studies and research on gluten and found that for certain people, gluten can cause an immune reaction in the small intestines, causing damage to the inner surface of the small intestine and an inability to absorb certain nutrients.
If the body doesn't receive certain nutrients, it has a nasty habit of letting you know in many unpleasant forms - like an upset stomach.
This condition, in relation to gluten, is known as Celiac disease. Although there is no cure, people who are sensitive to gluten or wheat can effectively manage it by changing their diet.
